Flapjack

Ingredients

  • 3 tbsp black treacle
  • 2 tbsp low fat margarine
  • 1 cup of oats
  • 2 tbsp sultanas
  • 2 tbsp raisins
  • 2 handfuls pumpkin seeds
  • 8 dates (stones removed and chopped)

Optional: mashed bananas

Method

  1. Pre-heat oven to 180șC / gm4
  2. In a bowl mix your margarine and black treacle smooth.
  3. Add your oats, pumpkin seeds, raisins, sultanas and dates and mix thoroughly so all ingredients are coated well.
  4. Grease a baking tray and pour all the mixture into the middle of the tray.
  5. With two spoons flatten roughly into a flat square shape.
  6. Now use a biscuit cutter or flat knife to straighten all the sides out and flatten the top evenly.
  7. Using your flat cutter divide the flapjack mixture into 5 strips then cut one line straight through all 5 strips to give you 10 bars.
  8. Place in the oven and cook for 20-25 minutes.
  9. When they are cooked leave the health bars to cool on the tray.

Fruit and Peanut Butter Wrap

Ingredients

  • 1 ripe banana
  • 1 tsp lemon juice
  • 1/2 (half) an apple
  • 6 tsp peanut butter, crunchy or smooth
  • 1 wrap (preferably wholemeal)

Method

  1. Peel and slice the banana very thinly. Place in a bowl and toss with the lemon juice.
  2. Quarter and core the apple. Slice into wafer thin slices and add to the bowl with the banana. Mix well.
  3. Warm the wrap in the microwave for about 10 seconds.
  4. Spread 6 tsp of peanut butter over the wrap. Place the banana slices and the apple slices over the top of the wrap. Roll up and enjoy immediately or refrigerate until later.
